In 2012 I was diagnosed with Celiac disease. Over the last ten years I have eaten my fair share of bad gluten free food, but I have also found recipes, restaurants, and other certified gluten free food that is really good. Gluten free food has come a long way in the last several years and there are more (and better) options than ever before. I always tell people that go gluten free that there is a lot of gross gluten free food out there–don't waste your tastebuds on it; however there are tons of delicious options that you can choose from, find the ones you like and focus on those. 

 This blog is a resource for people beginning their gluten free journey. I want to share some of my successes with those in a similar position as me. I hope you find this blog helpful. 

Struggles and things I miss
In all honesty, there isn't a lot that I miss. The main things I miss are cheap Chinese food, doughnuts (although you can find some pretty good GF doughnuts out there), and churros. The struggles that I still face are the convenience of eating out anywhere I want and eating at business lunch/functions. 

I don't eat out often and when I do I either go to places I know are educated in proper gluten free preparation or for new places, I do research and call the establishment. It's not fun eating food you know could make you sick. As far as eating at work functions, I still haven't figured that out. I have had a few employers in the last 10 years and all of them handle my dietary restrictions differently. Some employers just don't care and I either skip the meal entirely or just sit there drinking water while everyone eats in front of me. Some employers have been fantastic, going to extra lengths to make me feel comfortable and included.

Successes 
My wife decided that our home would be a gluten free home. All food that comes into our house will be something I can eat. Cooking and baking is something we really enjoy, and through a lot of trial and error we have found several recipes/mixes we like that are excellent replacements for food we enjoyed before going gluten free.
